How the animals are raised
We desire to leave this land better than when we came, so we have adopted a rotational grazing plan.
Animals are moved to fresh pasture every few days so that they get the best forage while regenerating the land through their manure and hoof-impact.
One of the results of using animals to build soil is that the nutritional quality of the meat is dramatically improved.
How the animals are butchered
We honour our animals by asking our local butcher to slaughter on-site. This way there is minimal stress hormone released into the meat.
The meat is hung and dry-aged for about 14 days.
Our butcher will customize your cuts according to your preferences. (Some people like more ground beef, some people like more roasts, etc.)
What does a half beef cost?
- You will be purchasing half an animal from us mid-October. The animals are approximately 18 months old. The price will vary depending on the final weight of the animal, but the approximate cost will be around $3500 for a live animal, or $1750 for a half.
- You will then pay the butcher directly for cutting and wrapping. Again, this depends on the weight of the animal, but it is around $400 for a half a beef. (Our butcher makes amazing all-beef sausage, so for a small charge, you can request that, too!)
- Therefore, your approximate cost for a full nutrient-dense beef will be $3500 or a half a grass-fed beef is $2150.
- A full beef should yield around 550 – 600 lbs hanging weight, so a half a beef will be about 275-300 lbs hanging weight.
- About 40% of the carcass is waste (bones, fat, etc.) so you will take home around 150 – 180 lbs cut and wrapped, ready for your freezer. This will fill an 8 cubic foot freezer.
- You can request the organs, tongue, tallow, marrow bones, and fat trim if you like to use those pieces as well.
