One of the blessings of raising our own meat birds One of the blessings of raising our own meat birds on pasture is being able to make healing chicken stock from their carcasses. 

Today I levelled up and overcame my fear of pressure canning. (It helped that I bought an easy-to-use electric pressure canner). 

Chicken stock and meat products cannot be canned using a water bath method. They require pressure canning.  I’ve been water bath canning for 35 years but this is the first time I’ve pressure canned anything. 😱

After 9 days in the kitchen, fermentation is done. After 9 days in the kitchen, fermentation is done. The sauerkraut now moves into cold storage to slow the fermentation process. 

I scoop some out to put in a jar and keep in the fridge for daily eating. A couple tablespoons every day with my meals is my probiotic supplement. It truly is a superfood. 

We will be eating sauerkraut until April.

We turned 250 lbs of cabbage into sauerkraut today We turned 250 lbs of cabbage into sauerkraut today. 

Sauerkraut is a superfood:  vitamin C from the cabbage and probiotics from the natural ferment.  We eat a little every day throughout the winter. 

Thanks to my fermentista sista @joannenyback  for bringing samples of her other vegetable ferments. 

What a blessing to use the electric slicer in Grace Lutheran’s kitchen.

It was applesauce week. We canned 44/2 pint jars o It was applesauce week. We canned 44/2 pint jars of applesauce and crab applesauce. 

It is such a delight to open a jar of applesauce in the winter time to use for baby food, baking, or dessert.

Too hot for the oven: round roast in the instant Too hot for the oven:  round roast in the instant pot for 1.5 hours. Pull apart and add homemade bbq sauce for a tender pulled beef meal.

I’ve never been great at pastry. But today my fr I’ve never been great at pastry. But today my friend @charlene_bish taught me how to make a simple pie crust.  And voila!  Saskatoon pie!

Sometimes all we need is a mentor. To show us. To let us walk alongside. I’m grateful I got to do that today.
