This time last year, I was still struggling with a This time last year, I was still struggling with aged cheeses. It was hit or miss and many failures went to the chickens. But…persistence paid off. I can now say I can make this aged alpine clabber cheese with confidence. This simple cheese has replaced our need for buying cheddar at the store. It works on a charcuterie board and as a melted cheese. My cheesemaking journey is continuing as I most recently made Gouda and Asagio for the first time. We got a bull! Well technically he’s not ours. H We got a bull! Well technically he’s not ours. He belongs to our neighbour and he is only here for a booty call to breed our milk cow Merry. So grateful for our neighbours who raised Romeo and our other neighbour for letting him come live with us until Merry is bred. Breeding our Jersey milk cows has been challenging. They go into heat every 21 days but it always seems like it is in the evening or when Wayne is working or the weather is -30C and we miss the window to get her to our other neighbour’s bull. Twin grandsons got a ride in our calf sled on Sund Twin grandsons got a ride in our calf sled on Sunday afternoon. Calf sleds are used when a calf is born in the pasture in the winter and its little wet body needs to get in a warm barn asap.
