This time last year, I was still struggling with a This time last year, I was still struggling with aged cheeses. It was hit or miss and many failures went to the chickens. But…persistence paid off. I can now say I can make this aged alpine clabber cheese with confidence. This simple cheese has replaced our need for buying cheddar at the store. It works on a charcuterie board and as a melted cheese. My cheesemaking journey is continuing as I most recently made Gouda and Asagio for the first time.
